Didn't get through the whole documentary (up to about the 21min mark), but the use of hemp as a substitute for concrete is VERY interesting.
Freefly : can you give us some idea of the difference in drop rates between free fall and wing suite ?
What sort of speeds and distances can be achieved with these ?
No probs, freefall speed is relative to what your trying to achieve.
Falling flat in a boxman position eg going for a tandem skydive or falling on your stomach you are doing around 180km/h vertically give or take body position, weight, what your wearing etc.
A freeflying position head down/feet down you're traveling between 220-300 as an average once again depending on body position, weight, clothing etc. The current speed skydiving record is 502.11 kph
Tracking is what we use to move away from things, ie getting away from each other on a skydive before deploying, flying around skydiving or big wall base jumps without a wingsuit. Doing this were traveling around 100-120km/h vertically and forward speed around the same. Good trackers can achieve 1-1 ratio of vertical to horizontal movement. This is aided with things like tracking suits (pants and jacket that inflate to increase surface area) and can get up to 1-1.5 ratios.

Wingsuiting glide ratios depend on many things including pilot skill, body position, type of wingsuit etc. I have 3 different wingsuits for different types of flying depending if I'm chasing speed, distance, maneuverability, acrobatics, lift etc.
A good wingsuit pilot in the suits you see in the awesome videos going around achieve glide ratios between 3.0-3.5, so for every meter they fall they move 3-3.5 forward. There vertical speed is around 40-80km/h and the forward speed anywhere between 160-260km/h depending on how there flying.
Usually in the videos you see though they are never maxing the suits out but rather diving them to get close to the objects they are flying next too, that way if they need to get away from the object or adjust their flight path they have some margin there.

I would imagine that its more about luck than judgement to avoid hitting tress or ground under you where as going along the side of cliffs would be alot safer , if thats possible ...

Luck plays no part at all. All of the lines they are flying in the videos they fly many times before starting high and getting lower and closer every time, making sure they know whats going on. Jumps are prepared for weeks with topographic maps gps data etc, there is no margin for error. If your doing something and the smallest mistake means your death wouldn't you want to be sufficiently prepared? Also the guys flying the crazy lines usually have thousands of skydives and 500-2000 wingsuit base jumps.
They get closer than you can see in the video literally inches away from trees and rocks, I've actually seen a video of someone accidently clipping a small branch with his arm.

Agreed, so many benefits. I remeber watching a speech of this dude for a uni class saying that something that reduces carbon, self replicates, creates a home/environment for species to thrust (there were a few more lines to go with it Im just a little hungover) and cutting it down just to write on it made an impact on my view of the use of trees. Everyone is looking for sustainable solutions, well that documentary just mentioned a shit load.
